Lola's Green Bean Salad

Source: My mom's best friend, Lola.
This recipe is simple, easy, healthy and a great side dish or salad. I love it with roasted or grilled chicken (check out my Beer Can Chicken recipe). The dressing for this recipe is also the same one I use for my Cucumbers and Onions.

  • 1 can(s)
    baby lesure peas, drained (1-10oz. pkg frozen baby peas, thawed can also be used)
  • 2 can(s)
    french style green beans, drained
  • 1 c
    chopped celery
  • 1/2 c
    chopped green pepper
  • 1/3 c
    chopped onion
  • 1/4 c
    diced pimento (in jar) (have used diced red pepper when out of pimento)
  • 3/4 c
    sugar (can use splenda)
  • 1/3 c
    apple cider vinegar
  • 2 Tbsp
  • 1/2 tsp
    salt, (optional)

How to Make Lola's Green Bean Salad


  1. Mix together sugar (or splenda), vinegar, water and salt. Stir until sugar is dissolved. Set aside.
  2. Mix all vegetables together; pour dressing over vegetables and mix until combined. Cover and refrigerate until ready to serve.
