lola's green bean salad
Source: My mom's best friend, Lola. This recipe is simple, easy, healthy and a great side dish or salad. I love it with roasted or grilled chicken (check out my Beer Can Chicken recipe). The dressing for this recipe is also the same one I use for my Cucumbers and Onions.

Ingredients
- 1 can baby lesure peas, drained (1-10oz. pkg frozen baby peas, thawed can also be used)
- 2 cans french style green beans, drained
- 1 cup chopped celery
- 1/2 cup chopped green pepper
- 1/3 cup chopped onion
- 1/4 cup diced pimento (in jar) (have used diced red pepper when out of pimento)
- 3/4 cup sugar (can use splenda)
- 1/3 cup apple cider vinegar
- 2 tablespoons water
- 1/2 teaspoon salt, (optional)
How To Make lola's green bean salad

Step 1Mix together sugar (or splenda), vinegar, water and salt. Stir until sugar is dissolved. Set aside.

Step 2Mix all vegetables together; pour dressing over vegetables and mix until combined. Cover and refrigerate until ready to serve.
