This recipe came to me by way of my sister-in-law's church cookbook from more than twenty years ago. Since I love lima beans I decided I'd give it a try. Photo source: bettyskitchen

Ingredients

  • 1 small onion, chopped fine
  • 1 small green bell pepper, chopped
  • 2 packages (12 oz. ea) frozen fordhook lima beans
  • 1 can (10-3/4 oz.) condensed cream of celery soup
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup grated cheddar cheese
  • 1/2 cup fine bread crumbs, buttered if desired

How To Make lima bean bake

  • Step 1
In a medium saucepan over medium-high heat, bring 1 to 1-1/2 cups water to a boil. Add the lima beans. Bring to second boil; cover and simmer about 20 minutes, or until beans are almost tender. Remove from heat and drain completely.
  • Step 2
Transfer the beans to a large mixing bowl and add the onion, green pepper, salt and black pepper. Mix well with spoon. Add the celery soup, undiluted, and mix well.
  • Step 3
Turn mixture into a greased (may use Pam) 9x13x2" baking dish. Top mixture with the cheese and then the bread crumbs.
  • Step 4
Bake in a preheated 350-degree oven for 30 to 40 minutes, until bubbly and golden brown.
  • Step 5
Serve while hot with a favorite meat, or on its own with a salad and bread.
