This light and delicious cole slaw is more than just a cabbage salad. This refreshing summer slaw is made with a variety of vegetables and a light and easy dressing.

Ingredients

  • 1/3 cup white vinegar
  • 1 teaspoon dijon mustard
  • 2 tablespoons sugar
  • 3 tablespoons vegetable oil
  • 1 teaspoon celery seed
  • 1/4 teaspoon black pepper
  • 1/2 medium cabbage,chopped
  • 1/2 large red onion,chopped
  • 1/2 medium red bell pepper,chopped
  • 1 medium green bell pepper,chopped
  • 1 medium cucumber,seeds removed,chopped
  • 1 - tomato,seeds removed,chopped
  • 4 - green onions,chopped

How To Make light summer slaw

  • Step 1
    In a small saucepan, combine the vinegar, sugar, oil, and celery seeds; stir to combine. Bring to a boil; remove from heat.
  • Step 2
    Combine the chopped vegetables in a large bowl; toss with the hot dressing mixture. Chill thoroughly before serving, then toss again.
  • Step 3
    This salad is great with ham, hot dogs, or sausages, and it's a nice light option!
