Ingredients
- 1 1/4 cups chicken broth
- 1/2 cup long grain rice, white or brown, uncooked
- 1/3 teaspoon ground cumin
- 1/2 teaspoon black pepper freshly ground
- 1 - red bell pepper, chopped
- 1/4 slice green onion
- 1 cup baby spinach, snipped
- 2 tablespoons parsley, snipped
- 1 teaspoon finely grated lemon zest
How To Make lemon pepper rice and vegetables

Step 1Bring chicken broth to a boil in a stock pot. Stir in uncooked rice, cumin, and ground black pepper. Cover and simmer for 10 minutes.

Step 2Stir in sweet peppers and green onions return to boiling. cover and cook about 10 to 20 minutes more. ( depending on cooking time needed for white or brown rice.

Step 3Stir in spinach, parsley, and lemon peel for another 5 minutes
