lemon pepper rice and vegetables

Ingredients

  • 1 1/4 cups chicken broth
  • 1/2 cup long grain rice, white or brown, uncooked
  • 1/3 teaspoon ground cumin
  • 1/2 teaspoon black pepper freshly ground
  • 1 - red bell pepper, chopped
  • 1/4 slice green onion
  • 1 cup baby spinach, snipped
  • 2 tablespoons parsley, snipped
  • 1 teaspoon finely grated lemon zest

How To Make lemon pepper rice and vegetables

  • Step 1
    Bring chicken broth to a boil in a stock pot. Stir in uncooked rice, cumin, and ground black pepper. Cover and simmer for 10 minutes.
  • Step 2
    Stir in sweet peppers and green onions return to boiling. cover and cook about 10 to 20 minutes more. ( depending on cooking time needed for white or brown rice.
  • Step 3
    Stir in spinach, parsley, and lemon peel for another 5 minutes
