Ingredients

chicken broth
1/2 c
long grain rice, white or brown, uncooked
1/3 tsp
ground cumin
1/2 tsp
black pepper freshly ground
1
red bell pepper, chopped
1/4 slice
green onion
1 c
baby spinach, snipped
2 Tbsp
parsley, snipped
1 tsp
finely grated lemon zest

How to Make LEMON PEPPER RICE AND VEGETABLES

Step-by-Step

  • 1Bring chicken broth to a boil in a stock pot. Stir in uncooked rice, cumin, and ground black pepper. Cover and simmer for 10 minutes.
  • 2Stir in sweet peppers and green onions return to boiling. cover and cook about 10 to 20 minutes more. ( depending on cooking time needed for white or brown rice.
  • 3Stir in spinach, parsley, and lemon peel for another 5 minutes
