Ingredients

1 1/4 c
chicken broth
1/2 c
long grain rice, white or brown, uncooked
1/3 tsp
ground cumin
1/2 tsp
black pepper freshly ground
1
red bell pepper, chopped
1/4 slice
green onion
1 c
baby spinach, snipped
2 Tbsp
parsley, snipped
1 tsp
finely grated lemon zest

Step-By-Step

1Bring chicken broth to a boil in a stock pot. Stir in uncooked rice, cumin, and ground black pepper. Cover and simmer for 10 minutes.
2Stir in sweet peppers and green onions return to boiling. cover and cook about 10 to 20 minutes more. ( depending on cooking time needed for white or brown rice.
3Stir in spinach, parsley, and lemon peel for another 5 minutes
