This is an excellent vegetarian dish for a pot luck or BBQ.

Ingredients

  • FOR THE LAYERS :
  • 6 medium potatoes ; sliced
  • 1 large onion , sliced
  • 2 large carrot , sliced
  • 2 large green bell pepper , sliced
  • 1 medium zucchini , sliced
  • 1 cup frozen or fresh corn
  • 1 cup frozen or fresh peas
  • 1/4 pound sliced fresh mushrooms
  • 1 cup broccoli florets
  • 1 cup frozen or fresh cut green beans
  • FOR THE SAUCE :
  • 2-1/2 cup tomato sauce
  • 1/4 cup tamari sauce ( a special type of soy sauce)
  • 1 teaspoon thyme
  • 1 teaspoon dry mustard
  • 1 teaspoon basil
  • 2 teaspoons chili powder
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon sage
  • 2 tablespoons parsley flakes

How To Make layered vegetables (in a crock pot )

  • Step 1
    Layer vegetables in a large crock pot in the order given .
  • Step 2
    Mix together all the sauce ingredients and pour over top of the layers of vegetables .
  • Step 3
    Cover and cook on Low setting for 12 hours or on high for 6 hours.
