Kale is as good for you as it is not tasty. Here's a wonderful way to make it irresistible to even your pickiest eaters.

Ingredients

  • 4 cups chopped kale
  • 2 cups italian bread crumbs
  • 1 cup parmesan cheese
  • 3 - eggs
  • - salt and pepper to taste
  • 1/4 cup shredded mozzarella (optional)
  • - jarred marinara (optional)

How To Make killer kale kakes

  • Step 1
    preheat oven to 375 degrees coat a baking pan with non-stick spray
  • Step 2
    combine finely chopped kale with beaten eggs, add salt and pepper to taste (remember that your bread crumbs are seasoned already), add Parmesan cheese and mix well, add bread crumbs 1/4 cup at a time until incorporated fully
  • Step 3
    spoon out 1/8 cup of mixture, form into a ball and slightly flatten into a cake, place on cookie sheet spaced 1/2 inch apart Bake for 30-40 minutes until golden brown
  • Step 4
    optional........sprinkle with shredded mozzarella and serve with warm marinara
