Ingredients
- 4 cups chopped kale
- 2 cups italian bread crumbs
- 1 cup parmesan cheese
- 3 - eggs
- - salt and pepper to taste
- 1/4 cup shredded mozzarella (optional)
- - jarred marinara (optional)
How To Make killer kale kakes

Step 1preheat oven to 375 degrees coat a baking pan with non-stick spray

Step 2combine finely chopped kale with beaten eggs, add salt and pepper to taste (remember that your bread crumbs are seasoned already), add Parmesan cheese and mix well, add bread crumbs 1/4 cup at a time until incorporated fully

Step 3spoon out 1/8 cup of mixture, form into a ball and slightly flatten into a cake, place on cookie sheet spaced 1/2 inch apart Bake for 30-40 minutes until golden brown

Step 4optional........sprinkle with shredded mozzarella and serve with warm marinara
