Back is the early 70s one of my co-workers gave me his recipe. It is fabulous. I found I could use almost an vegetable I had in my garden.

Ingredients
- 1 - zucchini, or summer squash, cut lenghtwise then into quarters
- 3 - large tomatoes, cut into 8 sections (you can use green tomatoes)
- 1 - large onion, chopped, you can use any onion, purple, red or green
- 1/4 pound mushrooms
- 1/4 cup sugar
- 1/4 teaspoon oregano, dry or fresh
- 1/4 teaspoon freshly ground pepper
- 1/2 teaspoon sea salt
- - butter
How To Make karen's zucchini scallop

Step 1Butter a casserole dish. Place onions on bottom and then layer the other vegetables. Sprinkle seasonings on top and dot generously with butter. Bake covered at 350* for 1 hour.
