Karen's Zucchini Scallop

It is fabulous. I found I could use almost an vegetable I had in my garden.
Ingredients

1zucchini, or summer squash, cut lenghtwise then into quarters

3large tomatoes, cut into 8 sections (you can use green tomatoes)

1large onion, chopped, you can use any onion, purple, red or green
-
1/4 lbmushrooms
-
1/4 csugar
-
1/4 tsporegano, dry or fresh

1/4 tspfreshly ground pepper
-
1/2 tspsea salt
-

How to Make Karen's Zucchini Scallop
- Butter a casserole dish. Place onions on bottom and then layer the other vegetables. Sprinkle seasonings on top and dot generously with butter.
Bake covered at 350* for 1 hour. - Serve HOT!
