simple kale with mushrooms (superfood)

This recipe was originally published in Redbook some time ago. I had been hearing about the Superfood value of kale from several people. So finally I decided to try kale. I think I was fortunate to find this recipe. Since I love mushrooms this made it easier to try a new food. And I actually liked it! If you have never eaten kale start with more mshrooms and less kale than called for to get used to the different and new taste.

Ingredients For simple kale with mushrooms (superfood)

1 Tbspolive oil

1 Tbspunsalted butter

1/2 cchopped onion

1 pkg(8-ounce) sliced fresh cremini mushrooms

1 mdshitake mushroom, sliced (or your favorite mushroom)

1 pkg(10-ounce) prewashed kale
-
sea salt and freshly ground black pepper to taste

1 pinchred pepper flakes, optional
How To Make simple kale with mushrooms (superfood)

1Wash, dry, and trim large stems from kale. Chop into large pieces. Set aside for a moment. Heat olive oil and unsalted butter in a large deep skillet over medium-high heat. Add diced onion and sliced mushrooms. Sauté until onion begins to soften and mushrooms are lightly browned, about 4 minutes. Stir in kale; keep stirring until kale is crisp-tender and bright green, about 5 minutes. Season with salt, freshly ground black pepper, and red pepper flakes to taste.
