simple kale with mushrooms (superfood)
This recipe was originally published in Redbook some time ago. I had been hearing about the Superfood value of kale from several people. So finally I decided to try kale. I think I was fortunate to find this recipe. Since I love mushrooms this made it easier to try a new food. And I actually liked it! If you have never eaten kale start with more mshrooms and less kale than called for to get used to the different and new taste.

Ingredients
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1/2 cup chopped onion
- 1 package (8-ounce) sliced fresh cremini mushrooms
- 1 medium shitake mushroom, sliced (or your favorite mushroom)
- 1 package (10-ounce) prewashed kale
- - sea salt and freshly ground black pepper to taste
- 1 pinch red pepper flakes, optional
How To Make simple kale with mushrooms (superfood)

Step 1Wash, dry, and trim large stems from kale. Chop into large pieces. Set aside for a moment. Heat olive oil and unsalted butter in a large deep skillet over medium-high heat. Add diced onion and sliced mushrooms. Sauté until onion begins to soften and mushrooms are lightly browned, about 4 minutes. Stir in kale; keep stirring until kale is crisp-tender and bright green, about 5 minutes. Season with salt, freshly ground black pepper, and red pepper flakes to taste.
