This vegetable medley is great to have on hand. Use as little as you want for each dish and can easily be doubled. And a great way to use the vegetables coming this spring and summer.

Ingredients For janet's magical veggi mix

1 mdonion chopped ( about 1/2 cup )

1 mdzucchini chopped ( about 1 cup )

4 to 5 ozmushrooms sliced ( about 1 cup )

1 -2 Tbspolive oil
-
1/2 tspmrs. dash ( any flavor )

1 mdcucumber chopped about1/2 inch cube
-
1 mdyellow squash chopped in 1/2 inch cube
How To Make janet's magical veggi mix

1Heat the olive oil over medium heat.

2Once hot, add the onion and bell pepper cook stirring frequently, until starting to soften, about 5 minutes.

3Add the zucchini and mushrooms until they have softened slightly. Remove from heat.

4Divide into small portions and freeze until ready to use.

5This mixture can be used in Tacos, Quesadillas, Nachoes or what ever you want. Great along a steak as a side salad
