This vegetable medley is great to have on hand. Use as little as you want for each dish and can easily be doubled. And a great way to use the vegetables coming this spring and summer.

Ingredients

  • 1 medium onion chopped ( about 1/2 cup )
  • 1 medium zucchini chopped ( about 1 cup )
  • 4 to 5 ounces mushrooms sliced ( about 1 cup )
  • 1 -2 tablespoon olive oil
  • 1/2 teaspoon mrs. dash ( any flavor )
  • 1 medium cucumber chopped about1/2 inch cube
  • 1 medium yellow squash chopped in 1/2 inch cube

How To Make janet's magical veggi mix

  • Step 1
    Heat the olive oil over medium heat.
  • Step 2
    Once hot, add the onion and bell pepper cook stirring frequently, until starting to soften, about 5 minutes.
  • Step 3
    Add the zucchini and mushrooms until they have softened slightly. Remove from heat.
  • Step 4
    Divide into small portions and freeze until ready to use.
  • Step 5
    This mixture can be used in Tacos, Quesadillas, Nachoes or what ever you want. Great along a steak as a side salad
