This vegetable medley is great to have on hand. Use as little as you want for each dish and can easily be doubled. And a great way to use the vegetables coming this spring and summer.

Yield 3 1/2 CUPS
Ingredients
- 1 medium onion chopped ( about 1/2 cup )
- 1 medium zucchini chopped ( about 1 cup )
- 4 to 5 ounces mushrooms sliced ( about 1 cup )
- 1 -2 tablespoon olive oil
- 1/2 teaspoon mrs. dash ( any flavor )
- 1 medium cucumber chopped about1/2 inch cube
- 1 medium yellow squash chopped in 1/2 inch cube
How To Make janet's magical veggi mix

Step 1Heat the olive oil over medium heat.

Step 2Once hot, add the onion and bell pepper cook stirring frequently, until starting to soften, about 5 minutes.

Step 3Add the zucchini and mushrooms until they have softened slightly. Remove from heat.

Step 4Divide into small portions and freeze until ready to use.

Step 5This mixture can be used in Tacos, Quesadillas, Nachoes or what ever you want. Great along a steak as a side salad
