Ingredients For italian roasted asparagus

  • 1 lb
    fresh asparagus, trimmed
  • 1 c
    grape tomatoes, halved
  • 3 Tbsp
    pine nuts
  • 3 Tbsp
    olive oil, divided (refined, not virgin)
  • 2 clove
    garlic, minced
  • 1 tsp
    salt
  • 1/2 tsp
    black pepper
  • 1 Tbsp
    lemon juice
  • 1/3 c
    grated parmesan cheese
  • 1 tsp
    grated lemon zest

How To Make italian roasted asparagus

    Preheat oven to 400°. Line a 15x10x1-in. baking sheet with foil. Place the asparagus, tomatoes and pine nuts baking sheet.

    Mix 2 tablespoons oil, garlic, salt and pepper; add to asparagus and toss to coat.

    Bake 15-20 minutes or just until asparagus is tender. Drizzle with remaining oil and the lemon juice; sprinkle with cheese and lemon zest. Toss to combine.
