I WANTED TO MAKE A SPINACH PIE N FOUND BISQUICKS RECIPE FOR IT WITH FETA ..... I DONT DO FETA SOOO I MADE MINE WITH RICOTTA N MONTEREY JACK N I USED EVAPORATED MILK IN THE CRUST....A NICE CHANGE FROM AN ALREADY GOOD RECIPE :)

Ingredients
- 1 box 10 0z. frozen chopped spinach, defrosed n squeezed
- 1 cup ricotta
- 1 medium onion, chopped
- 1/2 cup bisquick
- 2/3 cup evaporated milk
- 1/4 cup parmesan cheese
- 1/2 cup montereyjack cheese, shredded
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 - eggs

Step 1PREHEAT OVEN 400 DEGREES GREASE PIE PLATE

Step 2SAUTE ONIONS IN A LIL OLIVE OIL(1 TBLSPN) UNTIL TRANSPARENT. MIX SPINACH, MONTEREY JACK CHEESE, RICOTTA N SAUTEED ONIONS PUT IN PIE PLATE.

Step 3IN A SMALL BOWL MIX TOGETHER BISQUICK, EGGS, PARMESEAN CHEESE, EVAPORATED MILK N S&P THEN POUR INTO PIE PLATE ONTOP OF SPINACH MIXTURE.

Step 4BAKE 30-35 MINUTES N GOLDEN BROWN,COOL FOR 5 MINUTES THEN ENJOY :)
