This turns carrots into a wonderful side dish for ham or pork. With a large pile of these, you won't need a starch component for your meal.

Ingredients

4 medium
carrots, washed and hard ends removed
1-2 Tbsp
lemon juice (from about 1/2 a lemon)
2 Tbsp
honey
1 tsp
dry dill weed or 1 tablespoon fresh chopped
2 Tbsp
salted butter or margarine, cut into small dice
1/2 tsp
salt

How to Make Honey-Dill Shredded Carrots

Step-by-Step

  • 1Shred the carrots using the shredding blade of a food processor or the large holes on a grater.
  • 2Put the carrots in a microwaveable dish with cover.
  • 3Add the remaining ingredients and toss together to mix.
  • 4Cover and microwave on high for two minutes. Toss to mix again.
  • 5Cover and microwave another two minutes. Toss and test doneness and seasonings.
  • 6If necessary, adjust the seasonings, cover and microwave for another minute.
  • 7The carrots are done when they are still a bit crunchy but have lost their raw flavor. Serve as a hot and steamy side dish.
