healthy bok-choy slaw

I love using Bok0choy for stir-frys, and wanted to try something different. So, I made this slaw w/ bok-choy instead of regular cabbage and I like the taste of it better.

Ingredients
- 1/4 cup rice-wine vinegar
- 1 tablespoon toasted sesame oil
- 2 teaspoons sugar
- 2 teaspoons dijon mustard
- 1/4 teaspoon salt, or to taste
- 6 cups very thinly sliced bok-choy cabbage
- 1-1/2 cup shredded carrots
- 2 - scallions, thinly sliced
How To Make healthy bok-choy slaw

Step 1In lg bowl, whisk together vinegar, oil, sugar, mustard and salt. Add bok-choy, carrots and scallions. Toss to coat. Refrigerate until ready to serve.

Step 2This slaw goes great w/ any BBQ dish, but especially an Asian-flair type.
