I love using Bok0choy for stir-frys, and wanted to try something different. So, I made this slaw w/ bok-choy instead of regular cabbage and I like the taste of it better.

Ingredients

1/4 c
rice-wine vinegar
1 Tbsp
toasted sesame oil
2 tsp
sugar
2 tsp
dijon mustard
1/4 tsp
salt, or to taste
6 c
very thinly sliced bok-choy cabbage
1-1/2 c
shredded carrots
2
scallions, thinly sliced

How to Make Healthy bok-choy slaw

Step-by-Step

  • 1In lg bowl, whisk together vinegar, oil, sugar, mustard and salt. Add bok-choy, carrots and scallions. Toss to coat. Refrigerate until ready to serve.
  • 2This slaw goes great w/ any BBQ dish, but especially an Asian-flair type.
