I love using Bok0choy for stir-frys, and wanted to try something different. So, I made this slaw w/ bok-choy instead of regular cabbage and I like the taste of it better.

Ingredients

  • 1/4 cup rice-wine vinegar
  • 1 tablespoon toasted sesame oil
  • 2 teaspoons sugar
  • 2 teaspoons dijon mustard
  • 1/4 teaspoon salt, or to taste
  • 6 cups very thinly sliced bok-choy cabbage
  • 1-1/2 cup shredded carrots
  • 2 - scallions, thinly sliced

How To Make healthy bok-choy slaw

  • Step 1
    In lg bowl, whisk together vinegar, oil, sugar, mustard and salt. Add bok-choy, carrots and scallions. Toss to coat. Refrigerate until ready to serve.
  • Step 2
    This slaw goes great w/ any BBQ dish, but especially an Asian-flair type.
