How to Make Harvard Beets
- Drain beets, reserving 1/2 the liquid. Mix sugar and cornstarch in a saucepan. Blend in reserved liquid, vinegar and salt.
- Bring to a boil, stirring constantly. Reduce heat and simmer for 2 minutes. Add beets and simmer for 15 minutes longer.
- Stir in butter just before serving.
