harvard beets
I make Harvard Beets for my girlfriend's kids and have to double or triple this recipe for them. Even people who say they don't like beets seem to enjoy these beets.

Ingredients
- 2 cans beets, diced, sliced or baby whole
- 2/3 - sugar
- 2 tablespoons cornstarch
- 1/2 cup white vinegar
- 3/4 teaspoon kosher salt
- 1/4 cup butter
How To Make harvard beets

Step 1Drain beets, reserving 1/2 the liquid. Mix sugar and cornstarch in a saucepan. Blend in reserved liquid, vinegar and salt.

Step 2Bring to a boil, stirring constantly. Reduce heat and simmer for 2 minutes. Add beets and simmer for 15 minutes longer.

Step 3Stir in butter just before serving.
