A great side for slow-cooked bbq'd meat. You will need a grill basket with small holes for this.

Ingredients

  • 1 medium yellow summer squash, sliced 3/4 inch thick
  • 1 medium zucchini, sliced 3/4 inch thick
  • 8 ounces button mushrooms, whole
  • 1 large sweet onion, peeled and quartered
  • 1/2 pound baby carrots, cut in half lengthwise
  • 1 medium green bell pepper, seeded and cut into 1-inch chunks
  • 1 medium red bell pepper, seeded and cut into 1-inch chunks
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 2 tablespoons fresh basil, minced

How To Make grilled vegetable mixture for bbq

  • Step 1
    Place vegetables in a grill basket and sprinkle with the vegetable oil mixture.
  • Step 2
    Grill with the lid closed over medium flames, stirring occasionally until vegetables are tender (about 15 minutes).
