grilled vegetable kabobs

Ingredients

  • 2 cups hot cooked brown rice
  • 1/2 cup low calorie Italian dressing
  • 1 tablespoon fresh parsley, minced
  • 1 - yellow squash, cut in 1 1/2" pieces
  • 8 small boiling onions
  • 8 - cherry tomatoes
  • 8 - mushrooms
  • 1 teaspoon basil

How To Make grilled vegetable kabobs

  • Step 1
    Combine salad dressing, basil and parsley, cover and chill.
  • Step 2
    Alternate squash, onions, tomatoes and mushrooms on 8 skewers.
  • Step 3
    Grill kabobs over medium coals 15 minutes or until vegetable are tender, turning and basting with dressing.
  • Step 4
    Serve 2 kabobs over 1/2 cup of hot rice.
