grilled squash and/or zucchini

I love to throw these on the grill alongside my steaks or pork chops. They are really tasty!

Ingredients

  • 6 tablespoons olive oil
  • 2 teaspoons oregano, dried
  • 3/4 teaspoon rosemary
  • 1/2 teaspoon dried minced garlic
  • 1 pinch salt
  • 1 pinch black pepper

How To Make grilled squash and/or zucchini

  • Step 1
    Reconstitute the garlic by adding a little water to it or if you are making this ahead of time it can be added straight to the oil. Or if you want to use fresh, mince 2 cloves.
  • Step 2
    In a small bowl, mix the olive oil, oregano, garlic, rosemary, salt and pepper.
  • Step 3
    Cut the squash and/or zucchini lengthwise into quarters. Brush the marinade over all sides of the squash.
  • Step 4
    Heat your grill up on medium/medium high heat. Place squash onto grill. Grill, turning to cook all three sides until squash is tender.
