Working on healthy recipes for my husband who recently had surgery to remove a cancerous tumor in his colon. Vegetables, fresh and organic are my choice. Summer time is for grilling, thus the pizza.

Ingredients

  • TOPPINGS
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 2 medium tomatoes
  • 1/2 cup artichoke hearts, canned
  • 1 bunch fresh spinach
  • 1/2 cup kalamata (greek) olives (pitted)
  • 1 medium red onion
  • 1/4 cup garlic flavored olive oil
  • 1/2 cup tzatziki sauce
  • 1/2 cup feta cheese
  • TZATZIKI SAUCE
  • 1 cup greek yogurt
  • 1/2 cup english cucumber grated and drained
  • 1 large lemon, zest and juice
  • 3 cloves garlic minced
  • 2 teaspoons minced dill
  • 1 large whole wheat pizza dough

How To Make grilled greek pizza

  • Step 1
    Prepare charcoal grill with coals in lowest position. Roll out dough in shape desired.
  • Step 2
    Mix all ingredients for Tzatziki sauce. Spread thin layer over pizza dough (about 1/2 cup).
  • Step 3
    Thin slice tomatoes and set aside. Chop all other vegetables, drizzle with olive oil and place in grill pan on grill. Lightly grill until warmed, but not soft. Remove from grill and spread chopped vegetables over Tzatziki covered dough.
  • Step 4
    Place sliced tomatoes on top of vegetables and sprinkle with feta cheese and olives. Place on grill. Close lid on grill for 15 minutes or until dough is cooked through.
