We are moving, and I'm cleaning out the freezer. I noticed we had a plethora of PEAS!!! I created this recipe to encourage my family to start eating them. Guess what, it worked! :)

Ingredients

  • 16oz bag(s)
    split green peas
  • 1 large
    lemon
  • 1 c
    ricotta cheese, part-skim
  • 1 bunch
    basil, fresh
  • 1 Tbsp
    olive oil
  • 1 dash(es)
    salt and pepper

How to Make Green Peas with Lemon and Basil Ricotta

Step-by-Step

  1. Prepare and heat peas. Cut lemon in half. In a Cuisinart or blender, mix ricotta with basil and the juice and zest of one lemon half. Arrange peas on four plates. Put a dollop of the ricotta mixture on top of the peas. With the remaining lemon half, distribute zest and juice onto each plate, then lightly drizzle lightly with olive oil, and finish with a pinch of salt and pepper.
