green beans, walnut & feta cheese salad

Easy to make and only 10 inexpensive ingredents. Taste like it took hours to make but in reality, it takes only a few minutes. I make this to take to potluck suppers,Bunko dinners with our friends & game night at our church. I have made this dish in place of Greenbean Casserole at Thanksgiving and Christmas dinners. Everyone asks me to make this,my family loves it I hope you do too!

Ingredients
- 3/4 pound 3/4 pound of green beans (4 cans of drained green )beans
- 6 tablespoons light extra virgin olive oil
- 1/4 cup packed,finely chopped,fresh mint leaves
- 1/2 cup diced red onion
- 2 teaspoons white wine vinegar
- 1/4 teaspoon minced garlic
- 1/8 teaspoon black pepper
- 1/2 cup toasted or roasted & chopped walnuts or pecans
- 1/2 cup crumbled feta cheese

Step 1Wash beans,trim ends and cut into 2 inch sections. Steam until just tender (al dente).

Step 2Combine oil,mint,vinegar,salt,pepper,garlic into a blender and process until smooth.

Step 3Put the green beans into a shallow serving dish, sprinkle with nuts, onion and feta cheese. Toss with dressing just before serving. This is hood chilled or room temp. I usually add sliced red and yellow bell peppers. I have also used bacon pieces and halved baby tomatoes and yellow wax beans to add extra color and taste. The variations are remarkable!
