Ingredients
- 2 - red onions, chopped
- 1/3 cup canola oil
- 3 ounces tomato paste (1/2 6-oz. can)
- 4 cups fresh green beans, cut into thirds
- 3 - carrots, cut into matchsticks
- 2-3 - tomatoes, chopped
- - ginger - to your liking
- - garlic - to your liking
- - salt to taste
How To Make green beans & carrots w/ tomato, garlic & ginger

Step 1Saute onions on medium heat until onions become translucent. Add the oil and continue cooking for several more minutes.

Step 2Stir in the tomato paste and simmer several minutes coating the onions.

Step 3Add the green beans and carrots, stir well and cover. Continue cooking on medium heat for 10-15 minutes; then add the tomatoes, ginger, garlic, and salt.

Step 4Simmer until all of the vegetables are tender.
