Green Beans & Carrots w/ Tomato, Garlic & Ginger

2red onions, chopped
1/3 ccanola oil
3 oztomato paste (1/2 6-oz. can)
4 cfresh green beans, cut into thirds
3carrots, cut into matchsticks
·ginger - to your liking
·garlic - to your liking
·salt to taste
How to Make Green Beans & Carrots w/ Tomato, Garlic & Ginger
- Saute onions on medium heat until onions become translucent. Add the oil and continue cooking for several more minutes.
- Stir in the tomato paste and simmer several minutes coating the onions.
- Add the green beans and carrots, stir well and cover. Continue cooking on medium heat for 10-15 minutes; then add the tomatoes, ginger, garlic, and salt.
- Simmer until all of the vegetables are tender.
