Ingredients

  • 2 tablespoons olive oil
  • 1 medium sweet onion, peeled and chopped
  • 2 cloves garlic, peeled and minced
  • 1/2 cup unsalted butter, divided
  • 2 tablespoons all purpose flour
  • 1 pint heavy cream
  • 1/2 cup blue cheese, crumbled
  • 4 cans (14 oz) french cut or regular cut green beans, thoroughly drained
  • 1 cup canned french fried onions, chopped
  • 1 cup panko bread crumbs
  • salt and pepper, to taste

How To Make green bean casserole with blue cheese

  • Step 1
    Preheat oven to 400F. Coat a large baking dish with cooking spray.
  • Step 2
    Heat olive oil in a large skillet. Add onions and cook over medium heat until soft and translucent, about 5 minutes. Add garlic, cook one minute more.
  • Step 3
    Add 1/4 cup butter to pan, melt and stir into onions. Sprinkle flour over butter mixture, stir and cook flour for another 1-2 minutes.
  • Step 4
    Slowly stir in heavy cream. Bring to a simmer, add blue cheese and turn off heat. Stir until blue cheese is incorporated. Season to taste with salt and pepper.
  • Step 5
    Add green beans to skilled and mix until coated. Pour into prepared baking dish.
  • Step 6
    In a small bowl, melt remaining butter in microwave. Add chopped french fried onions and breadcrumbs, mix thoroughly. Sprinkle mixture over casserole.
  • Step 7
    Bake for 10-15 minutes or until hot and bubbly and topping is nicely browned.
