This is great for lunches at the office, I prep on Sunday, refrigerate it, then add oil and vinegar when I'm ready to eat!

Ingredients

1 Tbsp
salt
12 oz
small pasta, (your favorite)
1 large
cucumber, sliced
2 c
cherry tomatoes, halved
1 c
feta, crumbled
1/2 c
kalamata olives, (or your favorite)
1 medium
red onion, sliced
1/2 c
olive oil
3 Tbsp
red wine vinegar
1 1/2 tsp
dried oregano
salt and pepper to taste

How to Make Greek Pasta Salad

Step-by-Step

  • 1Cook pasta according to package directions.
    Drain (no rinsing) and bring to room temp.
  • 2In large bowl, place pasta, cuke, tomatoes, feta, olives, onion, and oregano. Salt and pepper to taste and add olive oil and toss to coat. Add red wine vinegar and your ready to serve.
