Ingredients
- 1 pound green beans, trimmed and halved
- 14 1/2 ounces can diced tomatoes (no salt added)
- 1 - onion, coarsely chopped
- 1 - small all-purpose potato, cubed
- 2 teaspoons dried oregano
- 2 teaspoons olive oil, extra virgin
- 1/4 teaspoon salt (optional, i omit)
- 1/4 teaspoon freeshly ground black pepper
- - freshly grated parmesan cheese
How To Make greek green beans

Step 1In a large nonstick saucepan, bring the beans, tomatoes, onions, potato, oregano, oil, salt and pepper to a boil. Reduce the heat and simmer, covered, stirring as needed, until the vegetables are tender ad the flavors are blended, about 1 hour. Transfer to a serving dish and sprinkle with parmesan cheese.
