Creamed spinach is my husband's favorite side dish. However, due to health problems he was forced to drastically cut almost all fat out of his diet. Most creamed dishes contain high fat levels but this recipe dramatically cuts the fat as well as the sugar contents. The nutritional benefits of spinach are exceptional and it is one of the best antioxidant and anti-inflammatory foods you can eat. We are very happy with this dish and love to eat it often.

Ingredients

  • 9 oz packages baby spinach
  • 1 teaspoon olive oil
  • 2 cloves garlic, minced
  • 3 tablespoons fat-free cream cheese, cut into cubes
  • 1/3 cup low-fat milk
  • 1/8 teaspoon sea salt
  • pinch - black pepper
  • pinch - nutmeg - or more to taste

How To Make garlicky creamed spinach

  • Step 1
    Heat a large skillet on medium. Add spinach and cook until wilted and easily gathered into a mound with tongs, stirring constantly. Transfer to a colander and squeeze out all excess water. Transfer to a cutting board and chop coarsely.
  • Step 2
    In the same skillet, heat oil on medium. Add garlic and stir occasionally until fragrant, about 30 seconds. Reduce heat to medium-low and add cheese and milk. Cook, stirring with a wooden spoon, until cheese melts and mixture thickens into a smooth sauce, 2-3 minutes. Stir in salt, pepper and nutmeg. Taste and add more seasonings if needed.
  • Step 3
    Add spinch to cheese mixture, separating with your hands; stir gently to coat.
