garlic smashed cauliflower "mashed potatoes"
Aside from the cauliflower (which is the main ingredient), everything is to taste. Add more/less depending on what you like. Consider this an "outline recipe" and really make it your own! You can add a myriad of different cheeses (I like the laughing cow light - any flavor), bacon bits, sour cream. Treat the toppings and extra's like you would a potato. It's a MUCH healthier option (depending on what you add to it)!

Ingredients
- 1 large head of cauliflower
- 1 teaspoon butter
- 1 clove garlic
- 1 pinch salt and pepper
- 1 tablespoon ricotta cheese, part-skim
How To Make garlic smashed cauliflower "mashed potatoes"

Step 1rinse head of cauliflower and remove green leaves and fibrous stem.

Step 2cut into manageble flourettes (they will be going into a blender/food processor so just make sure the pieces will fit)

Step 3steam for 10 minutes or until fork tender - don't worry you can't over cook it since it'll be mashed up later on!

Step 4add all remaning ingredients into blender/food processor. For the garlic, I like to use a microplane (which is a small grater), to finely mince the garlic so you won't bite down on any small pieces of while eating.

Step 5Blend/process until all ingredients are combined and smooth. Great for make ahead dinners, and freezes beautifully!
