Garlic Smashed Cauliflower "Mashed Potatoes"

Jim Pentland

Aside from the cauliflower (which is the main ingredient), everything is to taste. Add more/less depending on what you like. Consider this an "outline recipe" and really make it your own! You can add a myriad of different cheeses (I like the laughing cow light - any flavor), bacon bits, sour cream. Treat the toppings and extra's like you would a potato. It's a MUCH healthier option (depending on what you add to it)!

How to Make Garlic Smashed Cauliflower "Mashed Potatoes"

  1. rinse head of cauliflower and remove green leaves and fibrous stem.
  2. cut into manageble flourettes (they will be going into a blender/food processor so just make sure the pieces will fit)
  3. steam for 10 minutes or until fork tender - don't worry you can't over cook it since it'll be mashed up later on!
  4. add all remaning ingredients into blender/food processor. For the garlic, I like to use a microplane (which is a small grater), to finely mince the garlic so you won't bite down on any small pieces of while eating.
  5. Blend/process until all ingredients are combined and smooth. Great for make ahead dinners, and freezes beautifully!
