garlic smashed cauliflower "mashed potatoes"

Aside from the cauliflower (which is the main ingredient), everything is to taste. Add more/less depending on what you like. Consider this an "outline recipe" and really make it your own! You can add a myriad of different cheeses (I like the laughing cow light - any flavor), bacon bits, sour cream. Treat the toppings and extra's like you would a potato. It's a MUCH healthier option (depending on what you add to it)!

Ingredients

  • 1 large head of cauliflower
  • 1 teaspoon butter
  • 1 clove garlic
  • 1 pinch salt and pepper
  • 1 tablespoon ricotta cheese, part-skim

How To Make garlic smashed cauliflower "mashed potatoes"

  • Step 1
    rinse head of cauliflower and remove green leaves and fibrous stem.
  • Step 2
    cut into manageble flourettes (they will be going into a blender/food processor so just make sure the pieces will fit)
  • Step 3
    steam for 10 minutes or until fork tender - don't worry you can't over cook it since it'll be mashed up later on!
  • Step 4
    add all remaning ingredients into blender/food processor. For the garlic, I like to use a microplane (which is a small grater), to finely mince the garlic so you won't bite down on any small pieces of while eating.
  • Step 5
    Blend/process until all ingredients are combined and smooth. Great for make ahead dinners, and freezes beautifully!
