This is my aunt's version of fried okra. She did not like to use any flour. My mom preferred this recipe.

Ingredients

  • 2 pounds fresh okra, smaller ones are better!!
  • 3 large eggs, beaten
  • 1 teaspoon water
  • 2 cups cornmeal
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • vegetable oil

How To Make fried okra

  • Step 1
    Rinse the okra; drain well, and pat dry. Remove the tip and stem ends. Cut the okra crosswise into 1/2 inch slices. Set aside
  • Step 2
    Combine the eggs and water in a bowl; stir well. Add the okra and toss gently to coat well.
  • Step 3
    Combine the cornmeal, salt, and pepper in a bowl; stir well. Add okra to the cornmeal mixture, a few slices at a time, tossing gently to coat well.
  • Step 4
    Pour the oil to a depth of 1 inch into a large heavy skillet; heat to 375 degrees. Fry the okra in hot oil over medium heat until golden. Drain on paper towels.
