  • 4 medium eggplants
  • 1 cup all-purpose flour
  • 1 cup ground cornmeal
  • - salt and pepper to taste
  • 4 - eggs

How To Make fried eggplant

  • Step 1
    slice your eggplant in 1/2 inch slices. combine the flour and cornmeal to coat the eggplant also beat your eggs in a seperate bowl. salt and pepper the eggplant role in egg and role in flour cornmral mixture. place the coated eggplant in a large skillet with about 1/4 cup veg oil thats hot fry turning occasionally for about 25 minutes or until eggplant is golden brown serve
