FRESH OKRA & TOMATOES
I don't make this all the time but I have to say it is tasty.
3 Tbspall purpose flour
4 csliced okra (1 pound)
3/4 cchopped onion
2 clovegarlic, minced
3 cchopped tomatoes
1/4 tspground red pepper
How to Make FRESH OKRA & TOMATOES
- Cook bacon in a large skillet over medium heat until crispy. Remove bacon, reserving 3 tablespoons drippings in skillet; discard remaining drippings. Crumble bacon; set aside.
- Stir flour into remaining bacon drippings, & cook over medium heat, stirring constantly until it is caramel-colored (10-15 minutes).
- Add okra onion & garlic; cook 2 minutes, stirring constantly. Stir in tomatoes & remaining 3 ingredients. Cover & simmer 15 to 20 minutes or until okra is tender, stirring occasionally. Sprinkle with reserved crumbed bacon.
