This is a very quick & easy dish with lots of flavor. I remember when my children were very young my step-dad would making this & say to them that he slaved in the kitchen all day to make this. I don't make this all the time but I have to say it is tasty.

Ingredients

  • 8 slices bacon
  • 3 tablespoons all purpose flour
  • 4 cups sliced okra (1 pound)
  • 3/4 cup chopped onion
  • 2 cloves garlic, minced
  • 3 cups chopped tomatoes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon ground red pepper

How To Make fresh okra & tomatoes

  • Step 1
    Cook bacon in a large skillet over medium heat until crispy. Remove bacon, reserving 3 tablespoons drippings in skillet; discard remaining drippings. Crumble bacon; set aside.
  • Step 2
    Stir flour into remaining bacon drippings, & cook over medium heat, stirring constantly until it is caramel-colored (10-15 minutes).
  • Step 3
    Add okra onion & garlic; cook 2 minutes, stirring constantly. Stir in tomatoes & remaining 3 ingredients. Cover & simmer 15 to 20 minutes or until okra is tender, stirring occasionally. Sprinkle with reserved crumbed bacon.
