This is a very quick & easy dish with lots of flavor. I remember when my children were very young my step-dad would making this & say to them that he slaved in the kitchen all day to make this.

I don't make this all the time but I have to say it is tasty.

Ingredients

8 slice
bacon
3 Tbsp
all purpose flour
4 c
sliced okra (1 pound)
3/4 c
chopped onion
2 clove
garlic, minced
3 c
chopped tomatoes
1/2 tsp
salt
1/2 tsp
pepper
1/4 tsp
ground red pepper

How to Make FRESH OKRA & TOMATOES

Step-by-Step

  • 1Cook bacon in a large skillet over medium heat until crispy. Remove bacon, reserving 3 tablespoons drippings in skillet; discard remaining drippings. Crumble bacon; set aside.
  • 2Stir flour into remaining bacon drippings, & cook over medium heat, stirring constantly until it is caramel-colored (10-15 minutes).
  • 3Add okra onion & garlic; cook 2 minutes, stirring constantly. Stir in tomatoes & remaining 3 ingredients. Cover & simmer 15 to 20 minutes or until okra is tender, stirring occasionally. Sprinkle with reserved crumbed bacon.
