When corn is fresh in the summer, we love to use it in different ways. We plan to make this fresh corn salsa again. It's a touch sweet from the corn and kiwi, but tangy and has a hint of heat from the jalapeno. Kiwi in salsa is definitely a different ingredient but it works. We paired ours with some lime tortilla chips and it was the perfect bite.

Ingredients
- 3 ears - fresh corn roasted whole in oven or grill till tender
- 1 - fresh jalepeno, minced
- 1/4 - red onion minced
- 1 - avocado, diced
- 1 - fresh kiwi, peeled and diced
- 2 tablespoons fresh cilantro, minced
- 2 tablespoons olive oil
- pinch salt and pepper
- 2 teaspoons fresh lime juice
How To Make fresh corn salsa

Step 1Remove corn from the cob.

Step 2Mix all fresh ingredients.

Step 3Then whisk together oil and vinegar. Drizzle over salsa and toss gently. Refrigerate for at least an hour to mix flavors. Serve with tortilla chips.
