  • 3 ears
    fresh corn roasted whole in oven or grill till tender
  • 1
    fresh jalepeno, minced
  • 1/4
    red onion minced
  • 1
    avocado, diced
  • 1
    fresh kiwi peeled and diced
  • 2 TB
    fresh cilantro, minced
  • 2 TB
    olive oil
  • pinch
    salt and pepper
  • 2 TB
    fresh lime juice

How to Make fresh corn salsa


  1. Remove corn from cob. Mix all fresh ingredients, then whisk together oil and vinegar and drizzle over and toss gently. Refridgerate for at least an hour to mix
    flavors. Serve with tortilla chips.
