Fresh Corn Salad
2 1/2 ccorn, fresh or frozen, cooked
1 smallred onion, diced
3 Tbspcider vingar
3 Tbspolive oil
1/2 tspkosher salt
1/2 tspblack pepper
1/2 cfresh basil (i usually use 1 table. dry basil, more or less depending on your taste)
How to Make Fresh Corn Salad
- Cook your corn as directed. Toss everything together, unless you are using fresh basil. If using fresh basil add that just before serving.
- This can be served cold or at room temperature.
- *****PLEASE NOTE: I usually at least DOUBLE this recipe. Left-overs get better and better.******
