This recipe is from a popular restaurant in my city and the chef was nice enough to share it with a weekly food column in our local paper.

Ingredients

  • 2 8 ounces packages of frozen chopped spinach thawed
  • 1/2 - stick of butter
  • 8 ounces cream cheese room temp
  • - salt and pepper to taste
  • 1 cup fresh bread crumbs
  • - parmesan cheese

How To Make florentine augratin

  • Step 1
    Do not drain spinach!
  • Step 2
    In a sauce pan melt butter and cream cheese, add spinach and blend well. Make sure cream cheese is well mixed.
  • Step 3
    add salt and pepper to taste, then stir in bread crumbs mix well, It should be soggy.
  • Step 4
    Pour into greased casserole dish and top with parmesan cheese and bake 350 until lightly browned and thoroughly hot. 20-25 minutes
