This delicious dish is chock-full crisp-tender vegetables that are delicately seasoned with garlic, cheese and chicken broth. This is another super recipe from Taste of Home, that l made and really enjoyed.

Ingredients

  • 4 oz
    uncooked fettuccine
  • 1/2 c
    cauliflower, small florets
  • 1/2 c
    fresh snow peas
  • 1/2 c
    broccoli florets
  • 1/4 c
    julienned carrots
  • 1 Tbsp
    vegetable oil
  • 1/2 c
    julienned zucchini
  • 1/4 c
    julienned sweet red pepper
  • 2-3 clove
    garlic, minced
  • 1/3 c
    chicken broth
  • 1/4 c
    grated romano cheese

How to Make Fettuccine Primavera

Step-by-Step

  1. Cook fettuccine according to package directions. Mean while, in skillet or wok, stir- fry cauliflower, peas, broccoli and carrot in oil for 2 minutes.
  2. Add zucchini , red pepper and garlic; stir-fry until vegetables are crisp-tender. Stir in broth.
  3. Reduce heat; cover and simmer for 2 minutes.
  4. Drain fettuccine; toss with vegetables. Sprinkle with cheese.
