Fettuccine Primavera

Ingredients

4 ozuncooked fettuccine

1/2 ccauliflower, small florets

1/2 cfresh snow peas
-
1/2 cbroccoli florets
-
1/4 cjulienned carrots
-
1 Tbspvegetable oil
-
1/2 cjulienned zucchini
-
1/4 cjulienned sweet red pepper
-
2-3 clovegarlic, minced
-
1/3 cchicken broth
-
1/4 cgrated romano cheese
How to Make Fettuccine Primavera
- Cook fettuccine according to package directions. Mean while, in skillet or wok, stir- fry cauliflower, peas, broccoli and carrot in oil for 2 minutes.
- Add zucchini , red pepper and garlic; stir-fry until vegetables are crisp-tender. Stir in broth.
- Reduce heat; cover and simmer for 2 minutes.
- Drain fettuccine; toss with vegetables. Sprinkle with cheese.
