acorn squash, preferably organic cut in 1/2 lengthwise

pure, real maple syrup
1 Tbsp
butter, melted
1 tsp
cinnamon

Heat oven to 400. Spray lightly, a 9" x 13" baking dish w/ cooking spray. Place squash, cut-side up in baking dish.

In medium bowl, combine syrup, butter and cinnamon. Coat the cut side of squash evenly w/ syrup mix using a basting brush.

Bake 1 hr, bastin w/ syrup mix occasionally. It's done when it is fork tender. Great served w/ a roasted chicken w/ lots of herbs.
