Escabeche de Verduras / Pickled Veggies
1 lbpound red potatoes
3carrots, peeled and sliced
2cloves of garlic
1peppers, cut and strips
1onion, cut into strips
1 capple cider vinegar
How to Make Escabeche de Verduras / Pickled Veggies
- Put potatoes in a Smart Steamer with water in base. Cover and steam for 5 minutes.
Add the carrots, cover and steam for 5 minutes more or until potatoes are soft.
Remove from Smart Steamer and pass through cold water to cool quickly vegetables.
Put in a bowl /Pick-a-Deli with all remaining ingredients. Cover and refrigerate at least 1 hour or overnight, stirring occasionally.
