Ingredients
- 1 pound pound red potatoes
- 3 - carrots, peeled and sliced
- 2 - jalapeno chilies
- 2 - cloves of garlic
- 2 - bay leaves
- 1 - peppers, cut and strips
- 1 - onion, cut into strips
- 1 cup apple cider vinegar
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
How To Make escabeche de verduras / pickled veggies

Step 1Put potatoes in a Smart Steamer with water in base. Cover and steam for 5 minutes. Add the carrots, cover and steam for 5 minutes more or until potatoes are soft. Remove from Smart Steamer and pass through cold water to cool quickly vegetables. Put in a bowl /Pick-a-Deli with all remaining ingredients. Cover and refrigerate at least 1 hour or overnight, stirring occasionally. Serve cold
