Nice alternative to raw veggies, something with a little kick.. Diabetic recipe..But good for everyone..

Ingredients

  • 1 pound pound red potatoes
  • 3 - carrots, peeled and sliced
  • 2 - jalapeno chilies
  • 2 - cloves of garlic
  • 2 - bay leaves
  • 1 - peppers, cut and strips
  • 1 - onion, cut into strips
  • 1 cup apple cider vinegar
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar

How To Make escabeche de verduras / pickled veggies

  • Step 1
    Put potatoes in a Smart Steamer with water in base. Cover and steam for 5 minutes. Add the carrots, cover and steam for 5 minutes more or until potatoes are soft. Remove from Smart Steamer and pass through cold water to cool quickly vegetables. Put in a bowl /Pick-a-Deli with all remaining ingredients. Cover and refrigerate at least 1 hour or overnight, stirring occasionally. Serve cold
