ellen's confetti corn
I've always liked the canned Mexicorn but I would always add things to it, so I decided to create my own dish. Here it is. Feel free to play with the amounts and add or subtract ingredients.

Ingredients
- 2 cans whole kernel corn, drained
- 1/4 cup (1/2 stick) butter
- 1 small green bell pepper, seeded and chopped
- 1 small red bell pepper, seeded and chopped
- 1 medium onion, chopped
- 1/4 cup sour cream
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried basil, dried oregano, or chili powder, per your preference

Step 1In a large skillet, melt the butter over medium-high heat. Add the onion and peppers; saute for 5 minutes, stirring frequently.

Step 2Add the drained corn, sour cream, salt, pepper, and the seasoning of your choice. Cook, stirring often, for another 5 minutes or until heated through.
