- 1 pound small red potatoes, quartered
- 1 1/2 cups cut fresh green beans, 2-inch pieces
- 1 medium sweet red pepper, julienned
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups chopped fresh spinach
How To Make elegant roasted potatoes with veggies

Step 1In a large bowl, combine all ingredients except the spinach. Transfer into a greased 15x10x1-inch baking pan.

Step 2Bake, uncovered, in a preheated 425-degree oven for 25 minutes, stirring once halfway through. After 25 minutes, add the spinach. Bake an additional 15 to 20 minutes or until potatoes are tender, stirring once.
