This recipe has a few added ingredients but apart from that it was a recipe my husband's Auntie Oscaria gave me many years ago.

Ingredients
- 2 large eggplant
- 2 large zucchini
- 2 medium onions
- 12 - eggs
- 3 ounces grated cheese
- 10 tablespoons olive oil
- 1 teaspoon oregano, dried
- - salt & pepper
How To Make egg plant tortilla

Step 1Firstly wash the eggplants, cut into cubes sprinkle with salt and leave to one side for about 30 mins. After the 30mins rinse them with cold water and dry them with a paper towel.

Step 2Heat 3/4 of the oil, cut the zucchini into cubes and fry with the eggplants, add the onions,oregano,cheese, salt and pepper, fry at low heat untill tender.

Step 3beat the eggs vigoursly add the fried veggies and stir in the meantime heat the remaining 1/4 of the oil, pour the mixture and fry at low heat one side then flip over the tortilla by placing a bigger plate than the used frying pan tip over and return the undone side back to the frying pan. Can be flipped over as many times as you feel convenient.

Step 4This I have added just for the weight watchers, cook the veggies in very little oil and finish it off in a moderate oven, using low fat cheese and 4 whole egges and 6 whites.
