This was a dish I first tasted at my daughter's. It is easy, refreshing and so good!

Ingredients
- 1 package frozen, shelled edamame
- 1 can white shoepeg corn
- 1 small red onion, diced
- 1/3 cup red bell pepper, diced
- 1/3 cup orange bell pepper, diced
- 1/3 cup yellow bell pepper, diced
- 1 small bunch cilanto, finely chopped
- 2 tablespoons white balsamic vinegar
- 4 tablespoons olive oil, extra virgin
- - salt and pepper to taste
How To Make edamame salad

Step 1Steam or boil edamame for 3 to 4 minutes and let cool.

Step 2Combine all vegetables.

Step 3Mix oil, vinegar, salt & pepper and whisk well. Pour, all at once, over vegetables and mix well.
