Ingredients

  • 1 pkg
    frozen, shelled edamame
  • 1 can(s)
    white shoepeg corn
  • 1 small
    red onion, diced
  • 1/3 c
    red bell pepper, diced
  • 1/3 c
    orange bell pepper, diced
  • 1/3 c
    yellow bell pepper, diced
  • 1 small
    bunch cilanto, finely chopped
  • 2 Tbsp
    white balsamic vinegar
  • 4 Tbsp
    olive oil, extra virgin
  • ·
    salt and pepper to taste

How to Make Edamame Salad

Step-by-Step

  1. Steam or boil edamame for 3 to 4 minutes and let cool.
  2. Combine all vegetables.
  3. Mix oil, vinegar, salt & pepper and whisk well. Pour, all at once, over vegetables and mix well.
