This was a dish I first tasted at my daughter's. It is easy, refreshing and so good!

Ingredients For edamame salad

  • 1 pkg
    frozen, shelled edamame
  • 1 can
    white shoepeg corn
  • 1 sm
    red onion, diced
  • 1/3 c
    red bell pepper, diced
  • 1/3 c
    orange bell pepper, diced
  • 1/3 c
    yellow bell pepper, diced
  • 1 sm
    bunch cilanto, finely chopped
  • 2 Tbsp
    white balsamic vinegar
  • 4 Tbsp
    olive oil, extra virgin
  • salt and pepper to taste

How To Make edamame salad

  • 1
    Steam or boil edamame for 3 to 4 minutes and let cool.

    Combine all vegetables.
  • 3
    Mix oil, vinegar, salt & pepper and whisk well. Pour, all at once, over vegetables and mix well.
