Ingredients

  • 1 - 16 oz jar pickled sliced beets, 2 tbsp liquid reserved
  • 1 - 9 oz box frozen corn kernels, thawed
  • 1 - 9 oz box frozen sugar snap peas, thawed
  • 1/2 large red bell pepper, chopped
  • 1 - celery rib, chopped
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • 3 tablespoons olive oil
  • 1/8 teaspoon each, salt and pepper
  • 2 teaspoons chopped fresh basil

How To Make easy summer beet salad

  • Step 1
    In lg bowl, combine beets. corn, peas, red bell pepper, celery and parsley, whisk well.
  • Step 2
    In another bowl, whisk together beet juice, vinegar, mustard, oil, salt and pepper. Stir in basil. Pour mix over beets and gently toss.
