Ingredients
- 1 - 16 oz jar pickled sliced beets, 2 tbsp liquid reserved
- 1 - 9 oz box frozen corn kernels, thawed
- 1 - 9 oz box frozen sugar snap peas, thawed
- 1/2 large red bell pepper, chopped
- 1 - celery rib, chopped
- 1 tablespoon chopped fresh parsley
- 2 tablespoons red wine vinegar
- 1 teaspoon dijon mustard
- 3 tablespoons olive oil
- 1/8 teaspoon each, salt and pepper
- 2 teaspoons chopped fresh basil
How To Make easy summer beet salad

Step 1In lg bowl, combine beets. corn, peas, red bell pepper, celery and parsley, whisk well.

Step 2In another bowl, whisk together beet juice, vinegar, mustard, oil, salt and pepper. Stir in basil. Pour mix over beets and gently toss.
