Ingredients
- 1 pound carrots, peeled, cut into 2" pieces
- 1 pound sweet potatoes, peeled, cut into chunks
- 1 large red onion, peeled, halved, cut into 1" wedges.
- 1 pound red poataoes, cut into cubes
- 6 teaspoons minced garlic
- 1 - oz can chick peas, drained
- 3 tablespoons olive oil
- 1 teaspoon rosemary, crushed
- 1 teaspoon packed light brown sugar
- 1/2 teaspoon each salt and pepper
How To Make easy roasted veggies

Step 1Place oven rack in center of oven, heat oven to 425. Place all veggies and chick peas in a shallow roasting pan.

Step 2In small bowl, combine oil, rosemary, brown sugar, salt and pepper, whisk well.

Step 3Drizzle oil mix over veggies, toss to coat. Roast, uncovered for 45 min, or until veggies are tender.
