This delicious side dish goes well w/ anything!!

Ingredients

  • 1 pound carrots, peeled, cut into 2" pieces
  • 1 pound sweet potatoes, peeled, cut into chunks
  • 1 large red onion, peeled, halved, cut into 1" wedges.
  • 1 pound red poataoes, cut into cubes
  • 6 teaspoons minced garlic
  • 1 - oz can chick peas, drained
  • 3 tablespoons olive oil
  • 1 teaspoon rosemary, crushed
  • 1 teaspoon packed light brown sugar
  • 1/2 teaspoon each salt and pepper

How To Make easy roasted veggies

  • Step 1
    Place oven rack in center of oven, heat oven to 425. Place all veggies and chick peas in a shallow roasting pan.
  • Step 2
    In small bowl, combine oil, rosemary, brown sugar, salt and pepper, whisk well.
  • Step 3
    Drizzle oil mix over veggies, toss to coat. Roast, uncovered for 45 min, or until veggies are tender.
