  • 1 lb
    carrots, peeled, cut into 2" pieces
  • 1 lb
    sweet potatoes, peeled, cut into chunks
  • 1 large
    red onion, peeled, halved, cut into 1" wedges.
  • 1 lb
    red poataoes, cut into cubes
  • 6 tsp
    minced garlic
  • 1
    oz can chick peas, drained
  • 3 Tbsp
    olive oil
  • 1 tsp
    rosemary, crushed
  • 1 tsp
    packed light brown sugar
  • 1/2 tsp
    each salt and pepper

How to Make Easy roasted veggies


  1. Place oven rack in center of oven, heat oven to 425. Place all veggies and chick peas in a shallow roasting pan.
  2. In small bowl, combine oil, rosemary, brown sugar, salt and pepper, whisk well.
  3. Drizzle oil mix over veggies, toss to coat. Roast, uncovered for 45 min, or until veggies are tender.
