Easy roasted veggies
Ingredients

1 lbcarrots, peeled, cut into 2" pieces

1 lbsweet potatoes, peeled, cut into chunks

1 largered onion, peeled, halved, cut into 1" wedges.

1 lbred poataoes, cut into cubes

6 tspminced garlic

1oz can chick peas, drained
-
3 Tbspolive oil
-
1 tsprosemary, crushed
-
1 tsppacked light brown sugar

1/2 tspeach salt and pepper
How to Make Easy roasted veggies
- Place oven rack in center of oven, heat oven to 425. Place all veggies and chick peas in a shallow roasting pan.
- In small bowl, combine oil, rosemary, brown sugar, salt and pepper, whisk well.
- Drizzle oil mix over veggies, toss to coat. Roast, uncovered for 45 min, or until veggies are tender.
