I noticed that kids love veggies when there is cheese involved! So, I make this for my grandchildren when I do cook for them and they love it. Of course, I happen to love it too:)

Ingredients
- 1 - 16 oz bag frozen broccoli, cauliflower and carrots
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 teaspoon salt
- 1/4 teaspoon onion powder
- 1/4 teaspoon caraway seeds
- 1 cup 1% milk
- 1/2 cup regular or reduced-fat shredded swiss cheese
- 1/2 cup bread crumbs
- 1 tablespoon butter, melted
How To Make easy cheesy veggie bake

Step 1Heat oven to 350. Lightly spray a 1-1/2-quart casserole dish w/ cooking spray. Melt 2 tbsp butter in saucepan over medium heat. Stir in flour, salt, onion powder and caraway seeds.

Step 2Cook, stirring for about 1 min. Remove from heat. Stir in milk. Heat to boiling, stirring for 1 min. Stir in cheese until melted. Stir in veggies.

Step 3Spoon mix into casserole dish. In small bowl, mix bread crumbs w/ melted butter. Sprinkle over casserole. Bake 20 min, or until bubbly, and crumbs are a light brown.
