earthy roasted root veggies

I love roasted root veggies, they have such a Earthy, wonderful flavor, especially when paired w/ oil, vinegar and fresh herbs and because I am trying to eat more root veggies, this is a simple recipe I came up with to satisfy that need. Roasting root veggies bring out the natural sweetness..yum!

Ingredients

  • 6 - carrots, peeled & sliced
  • 6 - parsnips, peeled & sliced
  • 2 - large beets, peeled & sliced
  • 6 tablespoons olive oil
  • 1-1/2 tablespoon dijon mustard
  • 1/3 cup apple cider vinegar
  • 1'1/2 tablespoon fresh parsley, finely chopped

How To Make earthy roasted root veggies

  • Step 1
    Heat oven to 400. In large bowl, toss the veggies with olive oil and salt & pepper to taste.
  • Step 2
    Roast 45 minutes. In large serving bowl, whisk the mustard & vinegar until combined. Add roasted veggies and gently toss to coat.
  • Step 3
    Sprinkle w/ fresh parsley and serve.
