I love roasted root veggies, they have such a Earthy, wonderful flavor, especially when paired w/ oil, vinegar and fresh herbs and because I am trying to eat more root veggies, this is a simple recipe I came up with to satisfy that need.
Roasting root veggies bring out the natural sweetness..yum!

  • 6
    carrots, peeled & sliced
  • 6
    parsnips, peeled & sliced
  • 2
    large beets, peeled & sliced
  • 6 Tbsp
    olive oil
  • 1-1/2 Tbsp
    dijon mustard
  • 1/3 c
    apple cider vinegar
  • 1'1/2 Tbsp
    fresh parsley, finely chopped

How to Make Earthy roasted root veggies


  1. Heat oven to 400. In large bowl, toss the veggies with olive oil and salt & pepper to taste.
  2. Roast 45 minutes. In large serving bowl, whisk
    the mustard & vinegar until combined. Add roasted veggies and gently toss to coat.
  3. Sprinkle w/ fresh parsley and serve.
