I love roasted root veggies, they have such a Earthy, wonderful flavor, especially when paired w/ oil, vinegar and fresh herbs and because I am trying to eat more root veggies, this is a simple recipe I came up with to satisfy that need. Roasting root veggies bring out the natural sweetness..yum!

Ingredients For earthy roasted root veggies

6carrots, peeled & sliced

6parsnips, peeled & sliced

2large beets, peeled & sliced

6 Tbspolive oil
-
1-1/2 Tbspdijon mustard

1/3 capple cider vinegar

1'1/2 Tbspfresh parsley, finely chopped
How To Make earthy roasted root veggies

1Heat oven to 400. In large bowl, toss the veggies with olive oil and salt & pepper to taste.

2Roast 45 minutes. In large serving bowl, whisk the mustard & vinegar until combined. Add roasted veggies and gently toss to coat.

3Sprinkle w/ fresh parsley and serve.
