drema's "poor man's caviar"

A great appetizer or great side dish. Actually better if made a day or two ahead! You can adjust your likings by the aount of cilantro you prefer. This was served and passed down to me from an employee many years ago. Enjoy!

Ingredients For drema's "poor man's caviar"

  • 2 can
    black eye peas, drained
  • 2 can
    black beans, drained
  • 2 can
    corn, yellow kernel, drained
  • 2 can
    rotello diced tomatoes w/chilies
  • 2 bottle
    zesty italian dressing (sm bottles)
  • 1 sm
    cilantro bunch, chopped coarse

How To Make drema's "poor man's caviar"

    In large mixing bowl combine all ingredients except cilantro and onions. Mix thoroughly!

    Gently stir in cilantro and onions. Mix well. Add all of dressing and toss or stir gently. Cover in airtight container and store in frig until ready to serve. Serve cold with chips! Excellent!
