Date Night Bleu Velvet Salad

I wanted to make a date dressing and came up with this one....which is also a great marinade I experimented with. This salad it the spot with additional bleu cheese, and date topping.

  • 6 medium
    pitted dates
  • 3 Tbsp
    sesame oil
  • 1 tsp
    soy sauce
  • 1/4 c
    rice vinegar
  • 1 Tbsp
    minced garlic
  • 2 Tbsp
  • 1/4 tsp
    coarse ground dijon mustard
  • 1 pinch
  • 1 pinch

  • 6 medium
    pitted dates, inely chopped
  • 1/2 c
    chopped walnuts
  • 1 Tbsp
  • 1 tsp
    brown sugar
  • 1/8 tsp

  • 7 c
    mixed salad greens, such as a spring mix
  • 1/2 pt
    halved yellow cherub tomatoes
  • 4 oz
    crumbled bleu cheese

How to Make Date Night Bleu Velvet Salad


  1. In a small food processor or chopper,place dressing ingredients: 6 dates, sesame oil, soy sauce, vinegar, garlic ,honey, coarse mustard, salt and pepper. Blend together until smooth. Place mixture in the fridge while the rest of the salad is prepared.
  2. Place topping ingredients in a medium skillet and stir together over medium high heat until toasted and sticky. Transfer to a cool cookie sheet and spread out to cool.
  3. Divide salad greens between two large salad plates or 4 small ones. Top with tomatoes. Divide bleu cheese crumbled over the top of each salad. Top each with cooled topping mixture. Drizzle salads with sesame date vinaigrette.
