dandelion greens for health
Dandelion greens have multiple health benefits, including cleansing the liver and the blood and reducing inflammation and fighting Alzheimer's, so I have tried to eat them several times in the past, without success, either raw or cooked. Today, with the help of several friends, I came up with this recipe, which allows me to enjoy them. Just like spinach, kale or any other cooked green, boil and saute to your liking. The trick is the salt soak to get out most of the bitterness. You may find you like them raw after the cold soak! If so, just add them to your salad at that point!

Ingredients
- 1 bunch cultivated dandelion greens, from market
- 1 quart cool, salted water
- 1 quart boiling salted water
- 1 teaspoon olive oil
- 3 cloves peeled garlic
- 1 slice canned anchovy (or to taste)
- 1 pinch cayenne pepper
- 2 tablespoons red wine vinegar
- 1 tablespoon grey poupon dijon mustard
How To Make dandelion greens for health

Step 1Prepare the Greens: In a large bowl, add salt to cold water (as you would salt water for pasta.) Rinse the bunch of dandelions and lay in the salted water to soak for at least 30 minutes and more if you have time. Drain. Starting at the tip of the leaves, chop greens down to where stem begins. (Stems are tough and not desirable)

Step 2Bring a pot of fresh salted water to a boil. Add chopped dandelions and cook for about 5 minutes. (or more if you like) Meanwhile, chop the garlic cloves.

Step 3Over medium heat, warm a small skillet, drizzle olive oil to coat, add chopped garlic, and one slice of anchovy. Mash up the anchovy till it is disintegrated. Add cayenne.

Step 4When greens are cooked and garlic has softened, drain greens and add to garlic oil. Allow to simmer while you make the sauce.

Step 5In a small bowl, mix 2 Tablespoons of Red wine vinegar and 1 Tablespoon of Dijon mustard.

Step 6Remove dandelions from skillet and place in small bowl; drizzle mustard sauce over greens. This dish is good hot or at room temperature.
