curry succotash

I love succotash but wanted to try something different then just the basic, salt, pepper and hot sauce. Came up with this tonight, and it's a nice change, so thought I'd share it.

Ingredients

  • 32 ounces chicken stock, or broth
  • 1 teaspoon minced garlic. or 2 cloves
  • 1/8 teaspoon black pepper
  • 3-4 dashes texas pete hot sauce. more or less to taste
  • 1/2 teaspoon curry powder
  • 2 tablespoons butter
  • (2) 12 oz packages frozen lima beans
  • (1) 12 oz packages frozen corn
  • 2 slices cooked bacon, crumbled (optional)
  • 1/2 - onion, minced. or 1/2 tsp onion powder

How To Make curry succotash

  • Step 1
    Cook bacon until crisp, crumble when it cools. Meanwhile add chicken broth/stock to stockpot. Add spices. onion, butter, frozen corn and Lima Beans.
  • Step 2
    Bring mixture to a boil, then reduce heat to medium low/low and simmer for 15-20 minutes, until Lima beans are softened.
  • Step 3
    Serve with crumbled bacon on top (optional)
