Ingredients
- 1 pound fresh green beans
- 1/2 cup whole wheat bread crumbs
- 1 tablespoon chopped fresh parsley
- 2 tablespoons olive oil, divided
- 1 small red bell pepper, sliced
- 1 - onion, chopped
- 1 teaspoon minced garlic
- 1/4 cup chicken broth
- 1 tablespoon lemon juice
How To Make crunchy green bean bake

Step 1Heat oven to 350. Spray a casserole dish w/ cooking spray. Bring a pot of water to boil. Add green beans, cook 3 mins, drain.

Step 2In bowl, gently toss bread crumbs and parsley w/ 1 tbsp oil, set aside. In skillet, over medium heat, cook red bell pepper and onion in 1 tbsp oil until crisp-tender, about 2 mins. Add garlic. Cook 30 seconds, remove from heat.

Step 3Stir into skillet, the chicken broth, lemon juice and green beans. Season w/ salt and pepper. Spoon mix into casserole dish. Sprinkle bread crumb mix evenly over green beans. Bake 10 mins, or until heated through.
