My mom used to make this for us when we were kids, and it was by far my favorite veggie dish, and now it's my kid's too! Next time you make a rice dish, make extra to use for this recipe. You can even turn this into a one-dish meal by adding some deli roasted chicken. Great way to enjoy a lot of green veggies and whole grains!

evaporated milk
1/4 c
melted butter
1/4 c
chicken broth

cooked brown rice

parsley, chopped

frozen chopped spinach (thawed, squeezed & drained)
1/2 c
green onions

parmesan cheese

Step-by-Step

  • 1Combine milk, butter, broth and eggs. Beat until frothy.
  • 2Stir in remaining ingredients and pour into crockpot.
  • 3Cook on high for 1 hour. Then turn to low and cook another 4-6 hours.
