crockpot green rice casserole
My mom used to make this for us when we were kids, and it was by far my favorite veggie dish, and now it's my kid's too! Next time you make a rice dish, make extra to use for this recipe. You can even turn this into a one-dish meal by adding some deli roasted chicken. Great way to enjoy a lot of green veggies and whole grains!

Ingredients
- 1 1/2 cups evaporated milk
- 1/4 cup melted butter
- 1/4 cup chicken broth
- 3 - eggs
- 3 cups cooked brown rice
- 1 cup parsley, chopped
- 2 boxes frozen chopped spinach (thawed, squeezed & drained)
- 1/2 cup green onions
- 1 cup parmesan cheese
How To Make crockpot green rice casserole

Step 1Combine milk, butter, broth and eggs. Beat until frothy.

Step 2Stir in remaining ingredients and pour into crockpot.

Step 3Cook on high for 1 hour. Then turn to low and cook another 4-6 hours.
