~ creamy mashed cauliflower ~
My delicious alternative to mashed potatoes this Thanksgiving! It’s a plus when the whole family loves them! It’s whats for dinner tonight. Enjoy!

Ingredients
- 1 large head of cauliflower, cut into small pieces
- 2 tablespoons softened cream cheese or to taste
- 2-3 cloves garlic , cut in half or to taste
- 1/2 teaspoon chicken better than bouillon paste
- 1/4 cup grated parmesan or more to taste
- 4 tablespoons butter
- Salt & pepper to taste
- Sometimes i add a small onion sliced and add to garlic and cauliflower while cooking for added flavor. if using leave in also when mashing.
How To Make ~ creamy mashed cauliflower ~

Step 1Clean and cut cauliflower into small pieces. Place in dutch oven along with garlic and onion if using. Cover with cold water. I add some sea salt. Bring to boil then simmer until fork tender. Drain well and add to medium bowl or bowl of a food processor. ( if using food processor, add all ingredients to the hot cauliflower and process until desired consistency) I use my immersion blender to mash, so i place in a medium bowl.

Step 2Add everything else to hot well drained cauliflower. Puree everything together. Taste and readjust flavors to your taste. Serve hot. Can sprinkle with fresh chopped parsley. Enjoy! Sooo good!
