My delicious alternative to mashed potatoes this Thanksgiving! It’s a plus when the whole family loves them! It’s whats for dinner tonight. Enjoy!

Ingredients

  • 1 large head of cauliflower, cut into small pieces
  • 2 tablespoons softened cream cheese or to taste
  • 2-3 cloves garlic , cut in half or to taste
  • 1/2 teaspoon chicken better than bouillon paste
  • 1/4 cup grated parmesan or more to taste
  • 4 tablespoons butter
  • Salt & pepper to taste
  • Sometimes i add a small onion sliced and add to garlic and cauliflower while cooking for added flavor. if using leave in also when mashing.

How To Make ~ creamy mashed cauliflower ~

  • Step 1
    Clean and cut cauliflower into small pieces. Place in dutch oven along with garlic and onion if using. Cover with cold water. I add some sea salt. Bring to boil then simmer until fork tender. Drain well and add to medium bowl or bowl of a food processor. ( if using food processor, add all ingredients to the hot cauliflower and process until desired consistency) I use my immersion blender to mash, so i place in a medium bowl.
  • Step 2
    Add everything else to hot well drained cauliflower. Puree everything together. Taste and readjust flavors to your taste. Serve hot. Can sprinkle with fresh chopped parsley. Enjoy! Sooo good!
